I work out of a commercial kitchen in the Metro Detroit Area.  You can either work out of a commerical kitchen or commissary.  Either or is approved.  Right now, there are only a few commissaries open to the public in the Metro Detroit area:  Birmingham, Madison Heights and a large one in Bad Axe.  The commercial kitchen in Bad Axe is actally a test kitchen with MSU.  Check it out through the MSU Product Development Center - They assist entrepenurs from the ground up!
